The holidays can be a wonderfully festive time, but they can also bring a lot of pressure – especially if you’re navigating a cancer diagnosis or undergoing treatment. Tempting foods and celebratory drinks are everywhere, and the expectation to indulge can feel overwhelming.
Alcohol is often the default offering at gatherings, and many store-bought mocktails come loaded with processed sugar. For individuals living with cancer – and for their families – these limited options can be frustrating and discouraging.
Registered dietitian and Wellspring Nourish program leader, Shauna Lindzon, has helped us create a bright, refreshing and festive mocktail that supports your health without sacrificing taste or enjoyment.
The Green Lantern
Makes: 2 servings
Tools you will need: A blender, knife, microplane, measuring cup, juicer and fine mesh strainer.
Ingredients:
- 1 cup of fresh parsley
- 1 cup of cold water
- ½ teaspoon of lime zest
- ½ cup fresh-squeezed lime juice (approximately 4 medium sized limes)
- 2 tbsp honey (or more to taste)
- 1 cup of sparkling water
- ice for serving
- a few fresh or frozen cranberries
Directions:
- Juice and zest the limes.
- Add the parsley, cold water, lime zest, lime juice, and honey to a blender and blend until smooth.
- Strain through a fine mesh strainer over a liquid measuring cup
- Fill 2 glasses with ice cubes and divide the mixture into glasses
- Top evenly with sparkling water and serve while cold.
- Garnish with cranberries and enjoy!
